Instructions

  • 1.   Preheat the oven to 190 °C (375 °F).
    Soak the raisins in dark rum.
    Grate the apples and onion.
    Rub each piece of chicken with curry.
  • 2.   In a bowl, mix together the grated apples, onions, coconut, raisins with their rum, and the remaining curry.
    Work the mixture until it becomes creamy.
    Arrange the chicken pieces in an ovenproof casserole dish. Cover them with the curry mixture.
    Cover the dish with a lid and bake for about one hour.
    Halfway through cooking, turn the thighs over and stir the sauce.
    Remove the lid for the last ten minutes.
    Serve with rice.

  • 240 g of apple
  • 150 g of onion
  • 4 chicken thighs
  • 3 tablespoon of curry powder
  • 125 g of grated coconut
  • 12 cl of coconut milk
  • 25 cl of cream
  • salt (according to taste)
