Homemade Cordon Bleu and Vegetable Mash

Instructions

  • 1.   In a pot of salted boiling water, cook the peeled and chopped potatoes, carrots, and turnips for about 25 minutes.
  • 2.   Meanwhile, butterfly the turkey cutlets and place a slice of ham and Emmental cheese inside. Trim the edges with scissors so that the filling does not overflow.
  • 3.   Prepare three shallow plates for breading: one with flour, one with beaten eggs, and one with breadcrumbs.
  • 4.   Dip the stuffed cutlet first in flour, then in the egg mixture, and finally in the breadcrumbs. Repeat the egg and breadcrumb steps a second time.
  • 5.   In a hot frying pan, sauté the cordon bleu with a knob of butter.
  • 6.   Mash the cooked and drained vegetables using a potato masher. Add butter and season to taste.
