Three cheese pie

Instructions

  • 1.   Peel and steam the potatoes for 20 minutes, then test for doneness.
  • 2.   Preheat the oven to 200°C (400°F).
  • 3.   Peel and slice the onion, then sauté it in 1 teaspoon of olive oil.
  • 4.   Unroll one pastry sheet into the bottom of a pie dish and spread 1 tablespoon of sour cream. Spread the onions, potatoes, and cheese (sliced and without rinds) on top. Season if necessary.
  • 5.   Unroll the second pastry sheet and cover the pie, sealing the edges well. Brush with the beaten egg yolk diluted in 1 tablespoon of water, then bake for about 25 minutes.
