Instructions

  • 1.   Cook the minced onion and bacon for 5 minutes.
  • 2.   Meanwhile, separate the leaves of the endive. Add the endive leaves to the pan, season with salt, and stir for 2 to 3 minutes.
  • 3.   Pour in the beer and heavy cream, season with pepper, and reduce until only 4 tablespoons of juice remain.
  • 4.   Spread the endives apart slightly, crack the eggs into the pan. Cook until the whites are set.
  • 5.   It's ready!!
