1. Prepare the marinade with sesame oil, teriyaki sauce, rice vinegar, freshly grated ginger, cilantro (keep a few leaves), a few teaspoons of sesame seeds, and cayenne pepper.
2. Pour the marinade into the bowl containing the salmon and mix well.
3. Cut the avocados and mango into small cubes.
4. Finely slice the shallots.
5. Put them in the bowl containing the salmon and mix everything well. Place in the refrigerator.
6. Boil water and cook rice for 4 people.
7. Drain the rice and serve it in 4 small bowls, sprinkle with sesame seeds, and garnish with a few cilantro leaves.
8. Take the salmon-avocado-mango-marinade mixture out of the fridge, mix well again, and serve at the table.
