Instructions

  • 1.   Preheat the oven to 240°C (475°F) on convection mode.
  • 2.   Cut the onions in half lengthwise, removing the dry skin (and the outer layer if it is too tough). Cut off the top and part of the base so that they can sit flat during cooking.
  • 3.   Mix the melted butter, miso, and ~1 liter of hot water.
  • 4.   Place the onion halves in a baking dish or on a high-sided baking sheet, cut side down, and drizzle them with the miso butter.
  • 5.   Cover with aluminum foil and bake for 35 minutes.
  • 6.   Carefully flip the onions, making sure they don't fall apart, and generously drizzle them with miso butter. Return them to the oven for 45 minutes, uncovered, basting them every 10 minutes, until they are tender and deeply golden on top. The sauce should have reduced and thickened.
  • 7.   Gently transfer the onions to a serving dish, drizzle them with sauce, and enjoy immediately.
