Homemade Nougatine

Nougatine is a confectionery made with caramelized sugar and very fine pieces of almonds or nuts. It is used in pastry to create decorations or crunchy elements.

Instructions

  • 1.   Preheat the oven to 150°C (300°F).
  • 2.   In a dry frying pan, toast the sliced almonds.
  • 3.   In a saucepan over high heat, heat half of the sugar with the water and lemon juice. Once the mixture starts to color, add the remaining sugar and continue cooking until you obtain a nice caramel color.
  • 4.   Pour in the toasted almonds, quickly mix, and spread everything on a greased parchment paper.
  • 5.   Cover with a second greased sheet of parchment paper.
  • 6.   Roll out the nougatine with a rolling pin.
  • 7.   Let it cool and store the nougatine at room temperature in a glass jar.

  • 100 g of sliced almond
  • 2 tablespoon of water
  • 3 tablespoon of lemon juice
