Dhal - Nina's Red Lentils

Helps to eliminate excess moisture in the body and reduce swelling.

Instructions

  • 1.   Lightly crush the spices in a mortar.
    Gently heat the oil (do not let it smoke!) and sauté the coriander seeds and ginger (30 seconds) until they start to release their fragrance.
  • 2.   Add the onions and cook until golden brown over medium heat.
  • 3.   Add the previously washed lentils and sauté for a few moments.
    Add water and bring to a boil. Cook for 15 minutes. (Add more water if needed)
  • 4.   At the end of cooking, add 5% of the total mass of olive oil (this makes the legumes more digestible) and salt.
  • 5.   Garnish with a handful of chopped parsley.

  • 200 g of red lentil
  • 1 onion
  • 1 teaspoon of coriander seed
  • 2 teaspoon of fresh ginger
  • 2 star anises
  • 1 teaspoon of cumin seed
  • 2 cloves
  • 1 teaspoon of fennel seed
  • 1 olive oil
  • 1 liter of hot water
  • salt (according to taste)
