1. Lightly crush the spices in a mortar.
Gently heat the oil (do not let it smoke!) and sauté the coriander seeds and ginger (30 seconds) until they start to release their fragrance.
2. Add the onions and cook until golden brown over medium heat.
3. Add the previously washed lentils and sauté for a few moments.
Add water and bring to a boil. Cook for 15 minutes. (Add more water if needed)
4. At the end of cooking, add 5% of the total mass of olive oil (this makes the legumes more digestible) and salt.
5. Garnish with a handful of chopped parsley.
