1. In a sauté pan, sauté the sliced onions in olive oil until they are golden brown. Once the onions have a nice caramelized color, deglaze with white wine, remove them and set aside in a separate bowl.
2. Peel and dice an apple. Cook it in a pan with a little butter and sugar until it starts to caramelize. Set aside.
3. In the sauté pan, add minced garlic and crushed tomatoes. Cook until they are tender.
4. Add the caramelized onions and apples to the sauté pan and mix well.
5. Add ginger and mix well, then add cumin, coriander, chili, curry, paprika, and turmeric.
6. Add diced chicken and mix well to coat it with the sauce. Cover and cook for 10 minutes.
7. Once the chicken is cooked, add yogurt, coconut milk, and cream. Season with salt and pepper to taste!
8. Let simmer over very low heat, stirring occasionally, until the sauce thickens.
9. Serve hot, garnished with fresh coriander, accompanied by Indian Naan bread or basmati rice.
