Express Coconut Spinach Dahl

Instructions

  • 1.   Peel and finely chop the onions.
  • 2.   In a hot pan, heat a drizzle of olive oil.
    Add the onions and sauté for about 2 to 3 minutes over medium heat.
    Season with salt and pepper.
  • 3.   Add the grated garlic to the pan.
    Mix and cook for 1 minute.
  • 4.   Then add the curry, drained lentils, frozen spinach, coconut cream, and water (30ml per person).
    If desired, add ginger and turmeric. Cover and simmer over low heat for 15 minutes, stirring occasionally.
  • 5.   Serve the dahl with rice or a cooked egg according to your preference.
    It's ready!
