Sabich

The sabich is an iconic sandwich from Israeli cuisine, combining fresh and crunchy ingredients in a pita bread for an explosion of Mediterranean flavors.

Instructions

  • 1.   Slice the eggplant, sprinkle with salt, and let it drain for 20 minutes. Pat dry with paper towels.
  • 2.   Peel and slice the potatoes, then cook them in water until tender.
  • 3.   Boil the eggs in the same water for 10 minutes, then slice them.
  • 4.   In a greased pan, lightly brown the eggplant over low heat, then place them on paper towels.
  • 5.   Slice the tomatoes, cucumbers, and red cabbage. Chop the herbs, mix them together, and drizzle with lemon juice and olive oil.
  • 6.   Open the pita breads, spread the inside with hummus and tahini.
  • 7.   Stuff each bread with the ingredients twice.
