Sweet potato, leek, and chard sauté

Instructions

  • 1.   Peel the sweet potatoes and cut them into cubes. Wash the leek and slice it into thin rounds. Clean the chard and separate the stems from the leaves. Save the stems for another recipe and chop the leaves.
  • 2.   Put a drizzle of olive oil in a sauté pan and sauté the sweet potato cubes over medium heat for about fifteen minutes. When the sweet potatoes are tender, add the leek and chard greens, add 5 cl of water, season, and mix well. Continue cooking for 15 minutes.
  • 3.   For serving, I added some pine nuts and fried onions to add crunch.

  • 1 teaspoon of paprika
  • ½ teaspoon of ground cumin
  • ½ teaspoon of ground coriander
