One Pan Mexican Quinoa

Instructions

  • 1.   Heat a sauté pan with a little olive oil, then add the pressed garlic (or finely chopped) and the sliced ​​chili. Cook for 1 minute over high heat, stirring.
  • 2.   Add the quinoa, red beans, roughly crushed tomatoes, corn, spices, and broth. Bring to a boil, then reduce the heat and simmer covered for 20 minutes.
  • 3.   At the end of cooking, add the diced avocado, chopped cilantro, and drizzle with a splash of lime juice. Stir and serve immediately.
