Spinach Chakchouka

Instructions

  • 1.   Preheat the oven to 180 °C (350 °F).
  • 2.   Rinse the spinach sprouts. Peel, remove the germ, and crush the garlic cloves.
  • 3.   Place a large skillet over medium heat. Add the olive oil and cook the crushed garlic cloves. When they become fragrant, increase the heat to high and add the spinach, a handful at a time, while constantly stirring. Once all the spinach is added, season with ¼ teaspoon of salt and continue cooking until the spinach has wilted and its liquid has evaporated. Then add the heavy cream and the seven spices. Mix well and spread in a flat layer.
  • 4.   Crack the eggs over the spinach and bake for 10 minutes, until the whites are set. Season with the remaining salt, sprinkle with sumac, and serve.
