Instructions

  • 1.   Cut the butternut squash in half, remove the seeds, and peel it.
  • 2.   Cut it into small pieces and sauté them in a large pot with the butter and peeled and chopped ginger.
  • 3.   After about 5 minutes, add the broth and cover.
  • 4.   Let it cook for about 20 minutes, season with salt and pepper, and blend.
  • 5.   Serve in bowls with cream, sprinkled with thyme or basil and crushed pink berries.

  • 2 tablespoon of thick sour cream
  • 1 pinch of basil
