Onion confit, raclette cheese, and mushroom burgers

Instructions

  • 1.   Slice the onions and sauté them for 15 minutes over low heat in a pan with 2 tablespoons of olive oil. Add balsamic vinegar and sugar. Sauté for another 5 minutes: they should be golden and tender. Adjust the seasoning.
  • 2.   Meanwhile, slice the mushrooms and sauté them in a small pan with 1 tablespoon of olive oil.
  • 3.   Toast the buns in a pan, only on the inside. Separate the lettuce leaves.
  • 4.   Heat a dry pan over medium heat. Brush the burgers with olive oil and sear them for 2 to 3 minutes on one side. Flip them over and cover them with slices of raclette cheese. Cover and cook for another 2 minutes over low heat.
  • 5.   Assemble the burgers according to your taste, with the onion confit, mushrooms, lettuce leaves, and sauce.

Notes & Suggestions

  • Tip: add a splash of lemon juice to the mushrooms at the beginning of cooking to keep them a nice color. Feel free to freeze the onions and mushrooms (steps 1 and 2). Always handy to have on hand.

  • 2 tablespoon of balsamic vinegar
  • 4 tablespoon of olive oil
  • 1 teaspoon of fine sugar
  • 4 tablespoon of delhaize burger sauce
