Cod fish balls, tomato sauce, and spirals

Instructions

  • 1.   Preheat the oven to 180 °C (350 °F). Soak the stale bread in milk.
  • 2.   Pour olive oil and vegetable tomatoes into a casserole dish. Bring to a boil and let simmer. (Heat a pot of salted water.)
  • 3.   Cut the cod into small pieces and put them in the bowl of a grinder or blender. Add finely chopped onion, well-squeezed bread, egg, pepper, and salt. Blend until smooth. Adjust the seasoning and shape the mixture into balls, placing them on a baking sheet lined with parchment paper. Bake for 10 minutes in the oven.
  • 4.   Meanwhile, cook the spirals according to the instructions on the packaging.
  • 5.   Add the fish balls to the sauce and let simmer for another 2 minutes. Adjust the seasoning and serve hot with the pasta.

Notes & Suggestions

  • Tip: You can add some chopped parsley or basil to the raw fish mixture. It's also great to add peas and/or diced carrots to the pot of boiling water when cooking the pasta. Except for the pasta (step 4), you can prepare everything in advance and store the entire preparation in the freezer.
