Cajun Shrimp Rice

Instructions

  • 1.   Thaw the shrimp and vegetables beforehand, in a colander.
  • 2.   Shell the shrimp. Sauté them over high heat in a large skillet, with 3 tbsp of olive oil and 1 tsp of Cajun spices. Remove them as soon as they are well browned.
  • 3.   Add 4 tbsp of oil to the skillet. Sauté the vegetables over high heat for 5 minutes, with the pressed garlic cloves and 2 tsp of Cajun spices. Add the rice and mix for 2 minutes. Pour in 8 dl of hot water and add crumbled bouillon cubes. Bring to a boil, then let simmer for 8 minutes over very low heat.
  • 4.   Rinse the red beans with cold water, drain the corn, and add everything along with the shrimp to the rice. Mix and let simmer for another 2 minutes. Adjust the seasoning and serve.

Notes & Suggestions

  • Tip: You can add wedges of lime and/or cilantro as garnish.

  • 3 teaspoon of cajun American Style spices
  • 140 g of corn
  • 400 g of canned red bean
  • salt (according to taste)
  • pepper (according to taste)
