Sautéed zucchini and parsley mushrooms

Instructions

  • 1.   Finely dice the peeled zucchini and mushrooms.
  • 2.   Sauté over high heat in a little olive oil for about 5 minutes, stirring regularly to brown the mixture to your liking.
  • 3.   Reduce the heat slightly and add garlic. Let cook for another 5 minutes.
  • 4.   Cover and let cook for an additional 5 minutes if needed.
  • 5.   Season and add parsley just before serving.

  • 1 pinch of parsley
  • 1 teaspoon of olive oil
