Split pea puree with Toulouse sausages

Instructions

  • 1.   Clean the split peas, then bring them to a boil in a saucepan with 6 times their volume of water.

    Add a pinch of salt.
  • 2.   Once boiling, allow to cook for one hour.

    Add cumin, paprika, garlic, and diced potatoes.
  • 3.   After half an hour of cooking, cook the Toulouse sausages in a pan without adding anything.

    The goal is for them to be ready at the same time as the puree.
  • 4.   At the end of cooking, mash the vegetables with a potato masher and serve with the sausages.
