Caramelized chicken wings and pineapple fried rice

Instructions

  • 1.   Preheat the oven to 210 °C (410 °F). Cut the chicken wings in half at the joint, mix them with 2 tbsp of olive oil, and sprinkle them with chicken spices on both sides. Place them on a baking sheet lined with parchment paper and bake them in the oven for 20 minutes.
  • 2.   Cook the rice according to the instructions on the packaging, in a large amount of water. Drain it and rinse it thoroughly with cold water. Let it drain. Sauté the vegetables for 5 minutes over high heat in a large sauté pan with 4 tbsp of olive oil.
  • 3.   Remove the baking sheet from the oven and set it to broil. Drain the chicken wings and turn them skin side up. Brush them with a mixture of honey and 2 tbsp of soy sauce. Caramelize them for 10 minutes under the broiler, while keeping an eye on them.
  • 4.   Add the well-drained rice to the sauté pan with the vegetables. Sauté for 5 minutes over high heat, drizzle with 4 tbsp of soy sauce, and adjust the seasoning.
  • 5.   Quickly sauté the drained pineapple slices in hot butter. Serve with the chicken wings and fried rice.

Notes & Suggestions

  • Tip: you can add lime wedges to the plates and/or 1 tbsp of toasted sesame oil to the fried rice. Want to get ahead? Feel free to cook the rice mixture (step 2) the day before. You can also prepare the chicken (step 1) in advance and even freeze it.
