Orange and Carrot Soup

Instructions

  • 1.   Peel and slice the carrots. Pour 50 cl of water and the orange juice into a saucepan, add the carrot slices and about ¾ of the finely chopped coriander bunch.

    Cover and cook over low heat until the carrots are tender (about 20 minutes).
  • 2.   Blend the contents of the saucepan until smooth. Add the yogurt, salt, pepper, and mix.
  • 3.   Reheat the soup before serving, without letting it boil, and add the remaining coriander leaves.

  • 1 plain yogurt
  • 30 cl of orange juice
  • ½ teaspoon of sugar
  • ½ teaspoon of cinnamon
  • 1 pinch of ground coriander
  • salt (according to taste)
  • pepper (according to taste)
