Sweet potato tart with coconut milk and curry

Instructions

  • 1.   Peel and rinse the sweet potato, cut it into slices and steam them for about 15 minutes (they should remain slightly firm).
  • 2.   Preheat the oven to 180 °C (350 °F).

    Roll out the dough and line a tart pan with it. Prick the bottom with a fork and arrange the sweet potato slices.
  • 3.   In a bowl, whisk the whole eggs with the coconut milk and curry, season with salt and pepper, and pour over the dough.
  • 4.   Bake for about 35 minutes.

    Serve warm, sprinkled with coriander.
