Bean mixture, roasted cherry tomatoes, and ricotta dressing

Instructions

  • 1.   Preheat the oven to 180 °C (350 °F). Place the halved tomatoes in a dish. Drizzle them with 5 tablespoons of olive oil. Season with salt, pepper, sprinkle with dried thyme, and add the pine nuts. Roast in the oven for 10 minutes.
  • 2.   Meanwhile, trim the green beans and place them in a sauté pan with 2 tablespoons of olive oil and a splash of water. Cover and simmer for 3 minutes. Add the snow peas and sauté uncovered for a few minutes, until everything is cooked al dente.
  • 3.   Mix the ricotta and yogurt together. Season lightly.
  • 4.   Arrange the bean mixture on plates. Drizzle the dressing over it and top with the tomatoes. Pour the cooking juices from the tomatoes over everything and serve.

Notes & Suggestions

  • Tip: Depending on your taste, replace the thyme with other herbs, fresh or dried.
