Instructions

  • 1.   1. Prepare the browned butter
    Melt the butter over medium heat until it turns a beautiful golden color and releases a hazelnut fragrance. Let it cool.
  • 2.   2. Mix the dry ingredients
    In a bowl, sift and mix the powdered sugar, almond powder, flour, baking powder, and salt.
  • 3.   3. Add the egg whites
    Lightly whisk the egg whites until they foam, without beating them into stiff peaks.
  • 4.   4. Incorporate the butter and orange
    Add the cooled browned butter to the dry ingredients, then gently fold in the egg whites. Finish with the orange zest and juice.
