Instructions
1. If necessary, thaw the salmon. Preheat the oven to 200°C (400°F). Wash and cut the zucchini into half-moons.
2. Wash and cut the peppers, removing the core and seeds. Cut them into strips.
3. Prepare the marinade. In a bowl, mix: honey, soy sauce, grated garlic, and grated ginger. Add a drizzle of olive oil, if desired, and mix.
4. In an ovenproof dish, add the zucchini and peppers. Pour half of the marinade over them, then mix. Bake for 15 to 20 minutes at 200°C (400°F).
5. Meanwhile, marinate the salmon. In a shallow container, coat the salmon with the other half of the marinade, then set aside to allow the salmon to absorb the mixture.
6. Remove the vegetable dish from the oven and add the marinated salmon fillets. Season with pepper, then return to the oven for 15 minutes at 200°C (400°F).
7. In parallel, cook the rice in a pot of salted boiling water according to the package instructions. Drain it at the end of cooking.
8. Once the vegetables are grilled and the salmon is cooked through, remove the dish from the oven.
9. Serve the grilled salmon with the roasted vegetables and rice. Drizzle the salmon with the marinade and season to taste. It's ready!
