Roasted scallops with thyme and herb butter

Instructions

  • 1.   Preheat the oven to 250°C (482°F)
  • 2.   Mix the softened butter with the fresh herbs, previously rinsed and drained, to obtain a paste
  • 3.   Remove the flesh from the scallops and remove the cartilage ring that surrounds the white part
  • 4.   Season the scallops with salt and pepper, place a dollop of herb butter and a sprig of thyme on each scallop
  • 5.   Bake for 2 to 3 minutes, then add a lemon zest.

  • 10 g of chives
  • 10 g of tarragon
  • 10 g of fresh coriander
  • 8 scallops
  • 1 sprig of thyme
  • 1 lemon zest
  • salt (according to taste)
