Instructions

  • 1.   Shell the broad beans and blanch them for 2 minutes in salted boiling water. Drain and rinse under cold water.
  • 2.   Cut the asparagus into pieces and grill them in a pan with a drizzle of olive oil for 5 minutes.
  • 3.   Crumble the feta and finely chop the mint.
  • 4.   In a salad bowl, mix the broad beans, asparagus, feta, and mint. Season with olive oil, lemon juice, salt, and pepper. Serve chilled and enjoy.
