Baião de Dois - Beans and Coconut Rice

Baião de Dois is a traditional dish from Northeast Brazil, combining beans and rice cooked in coconut milk. This vegetarian version is quick to prepare and offers a unique taste thanks to the coconut milk.

Instructions

  • 1.   Chop the garlic and onion, then sauté them in a little oil and/or margarine with the bay leaf.
  • 2.   When the onion is translucent, season with salt and pepper, add the rice and sauté for a few moments.
  • 3.   Add the coconut milk and add a little water, about 1 cm above the level of the rice.
  • 4.   Add the beans and bring to a boil.
  • 5.   Cover and let cook for about fifteen minutes over very low heat.
  • 6.   Remove from heat and let it rest for about ten minutes.
  • 7.   Open the pot, gently mix, sprinkle with parsley or cilantro, and serve.

  • 1 garlic clove
  • 1 leaf of bay leaf
  • 2 tablespoon of oil
  • salt (according to taste)
