1. Peel, wash the carrots, then cut into slices. In a large saucepan, pour water and salt.
2. Bring the water in the saucepan to a boil, add the carrots, bring to a boil again, cook for 2 to 3 minutes then drain.
3. Wash the parsley, pat dry. Peel the garlic cloves, remove the central germ, place in a small blender, blend.
4. In a large skillet, melt the butter, add the carrots, mix, cook for about 10 minutes, as soon as they are cooked, season with salt and pepper.
5. Adjust the seasoning if necessary, then add garlic and parsley, mix, cook for 3 to 4 minutes, serve hot with meat or fish.
