1. Preheat your oven to 180°C (350°F).
2. Peel the parsnips and cut them into slices.
3. Place the parsnips in boiling water and let them cook for 20 minutes.
Season with salt and pepper.
4. Chop the garlic and onion.
5. In the bottom of a gratin dish, spread the garlic, onion, and half of the cream.
Mix well.
6. Add the parsnips, then the other half of the cream with the chopped chives.
7. Sprinkle with gruyère cheese. Bake for 20 minutes. Serve!
