Tuscan Chicken

Tonight, we opt for a warm and hearty meal that requires little time in the kitchen. Made with chicken served in a creamy sauce composed of sun-dried tomatoes, garlic, baby spinach, cream, and Parmesan that has simmered gently, it pleases the whole family. Here's a weekday dish with a delicious Italian touch.

Instructions

  • 1.   In a large non-stick skillet over medium-high heat, brown the chicken in oil for 5 minutes. Season with salt and pepper. Flip the chicken and continue cooking for 3 minutes. Transfer to a plate.
  • 2.   In the same skillet, soften the sun-dried tomatoes and garlic in the cooking fat. Add the spinach and continue cooking until wilted.
  • 3.   Add the cream, Parmesan, oregano, and chili pepper. Season lightly with salt and pepper. Bring to a boil. Return the chicken to the skillet with its accumulated cooking juices on the plate. Cover and simmer for 7 minutes or until the chicken is cooked through and the sauce has thickened. Adjust the seasoning.
  • 4.   Meanwhile, cook the pasta in a pot of salted boiling water until al dente. Reserve 125 ml (1/2 cup) of cooking water. Drain.
  • 5.   Add the pasta to the sauce around the chicken. Mix well. Add cooking water to loosen the sauce, if needed.
  • 6.   If desired, slice the chicken breasts on a work surface. Divide the pasta and chicken among shallow plates. Sprinkle with Parmesan. Serve with lemon wedges.

  • 40 g of dried tomato
  • 2 garlic cloves
  • 140 g of spinach sprout
  • 180 ml of thick sour cream
  • 35 g of grated parmesan
  • 3 ml of dried oregano
  • ¼ teaspoon of chili pepper
  • 225 g of pasta
