Oven-baked pork chops, express barbecue sauce

Prepared on the show "La cuisine d'Isabelle et Ricardo," these pork chops are cooked on a baking sheet in the oven and coated with a dry brine made with paprika, brown sugar, garlic powder, and salt, which gives them a lot of flavor quickly. They are served with an express barbecue sauce made with ketchup and maple syrup for an easy dinner that the whole family will enjoy.

Instructions

  • 1.   Place the rack in the center of the oven. Preheat the oven to 220 °C (425 °F).
  • 2.   On a non-stick baking sheet or one lined with parchment paper, coat the vegetables with 30 ml (2 tbsp) of oil. Season with salt and pepper. Bake in the oven for 15 minutes.
  • 3.   Meanwhile, in a small bowl, mix the paprika with the brown sugar, garlic powder, and salt. Season generously with pepper.
  • 4.   On a plate, coat the pork chops on both sides with the spice mixture. Drizzle with the remaining oil. Let marinate while the vegetables cook.
  • 5.   Remove the baking sheet from the oven. Arrange the pork chops on the sheet among the vegetables. Continue baking in the oven for 10 minutes or until desired doneness. Let the pork chops rest for 5 minutes on another plate. Continue baking the vegetables in the oven until golden and tender, if necessary. Pour the accumulated cooking juices from the plate over the vegetables. Mix well.
  • 6.   Meanwhile, in a measuring cup or glass bowl, mix all the ingredients. Season with salt and pepper. Microwave for 1 minute 30 seconds, stirring halfway through cooking.
  • 7.   Divide the meat and vegetables among plates. Serve with the sauce. Sprinkle with chives. Serve with mashed potatoes, if desired.

  • 60 ml of ketchup
  • 60 ml of maple syrup
  • 2 tablespoon of whole grain mustard
  • 1 tablespoon of apple cider vinegar
