Carrot, Chickpea, and Green Olive Tagine

Instructions

  • 1.   1. Slice the onion. Peel and cut the carrots into chunks.

    1. Sauté the onion in olive oil. Add a tablespoon of Ras-El-Hanout and mix. Add the carrots. Cover with water.


    Let it cook for 40 minutes.

    1. Add drained chickpeas and green olives. Let it cook for another 10 minutes.


    2. Season with salt and pepper and sprinkle with parsley.
