Potato and spinach curry

Instructions

  • 1.   1. Peel and finely slice the onions. Peel the potatoes and cook them for 15 minutes in a large pot of salted boiling water.

    Rinse them under cold water and cut them into slices.
  • 2.   2. In a sauté pan, heat a little oil. Add the onions, lightly salt them, and let them cook for 5 minutes over medium heat.

    (Adding salt helps the onions release their water)
  • 3.   3. Add the potatoes, fresh spinach, spices, and a pinch of coarse salt. Cook covered until the spinach is tender.

    Add a spoonful of oil if the mixture sticks.
  • 4.   4. Check the seasoning and serve hot.

  • 2 onions
  • 900 g of potato
  • 300 g of fresh spinach
  • ½ teaspoon of paprika
  • ½ teaspoon of ground cumin
  • ½ teaspoon of turmeric powder
  • ½ teaspoon of ginger powder
  • 1 teaspoon of oil
  • salt (according to taste)
