Instructions

  • 1.   1. In a large pot, place the pasta, diced eggplant, tomatoes, chopped onion, and garlic. Season and cover with 2 ½ cups of water. Cook for 15 minutes over medium heat, stirring regularly.

    1. Let it sit for a few minutes before serving, garnished with basil.
