1. Prep: finely chop the garlic, parsley, and coriander leaves
Cut the large mushrooms in half and leave the small ones whole.
In a pot, heat the oil over low heat and add the garlic for a few seconds.
Add the mushrooms, cover the pot, and cook for 7 minutes, stirring occasionally.
Add the parsley, coriander leaves, salt, and pepper, cover again, and cook for an additional 3 minutes.
Remove the cover and cook for another 3 minutes.
Serve hot or warm.
