Low GI Chocolate and Roasted Hazelnut Cake

Instructions

  • 1.   Melt the chocolate and butter in a double boiler, let it cool.
    Dry roast the hazelnut powder (be careful not to let them burn, it happens quickly!)
    Whisk the egg yolks with the sugar until the mixture becomes pale, then add the melted chocolate mixture. Then add the hazelnut powder.
    Beat the egg whites until stiff peaks form, then fold them into the mixture.
    Grease a 20 cm diameter cake pan and pour the batter into it.
    Bake at 180 C for 35 to 40 minutes (keep a close eye on the baking, it should remain moist).

  • 125 g of hazelnut powder
  • 75 g of fructose
  • 150 g of butter
  • 4 eggs
