Split pea soup

Instructions

  • 1.   Finely chop the onion, dice the celery, dice the carrot.
  • 2.   Combine all the ingredients in a 3.5-quart slow cooker. Stir. Cover.
  • 3.   Cook on low heat for 8 to 10 hours or on high heat for 4 to 5 hours.

Notes & Suggestions

  • If you don't have a slow cooker, soak the peas for 24 hours. Skim off any foam.
    In a large pot, sauté the ham and onion in 4 tablespoons of oil and 3 tablespoons of butter for 3 minutes.
    Add the remaining ingredients, mix well, bring to a boil, then reduce the heat and let simmer covered for 1 hour and 20 minutes to 2 hours.
    Stir regularly, remove from heat and let rest for 10 minutes before serving.

  • 1 cup of ham cubes
  • 1 carrot
  • ½ cup of celery stalk
  • 1 cup of onion
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • 1 teaspoon of parsley
  • 1 tablespoon of chicken bouillon cube
  • 1 teaspoon of thyme
  • 5 cup of water
