1. Remove the skin from the pumpkin and cut it into small cubes of about 1 cm.
2. Heat a large pot and immerse the pumpkin cubes in it until the flesh is soft (insert a knife into the flesh and if the blade goes in easily, it's done).
3. At the same time, cook the rice in another pot.
4. Preheat your oven to 220°C (425°F).
5. When both are cooked, sauté onions in an oiled pan with the bacon.
6. In a bowl, pour all the ingredients (pumpkin, rice, bacon, and onions), add the cream, salt and pepper, and add 2 large handfuls of grated cheese.
7. Mix everything by hand, then pour into a buttered dish.
8. Sprinkle grated cheese on top.
9. Bake at 220°C (425°F) for about 30-45 minutes.
10. Serve hot with fish or white meat.
