Parmentier Cod Brandade

Instructions

  • 1.   Soak the cod in water for 36 to 48 hours before preparing the brandade (changing the water regularly).
  • 2.   Cook the potatoes and prepare a mashed potato.
  • 3.   Crumble the soaked cod and mix it with the mashed potatoes, crushed garlic, and chopped parsley.
  • 4.   Gradually add olive oil (the more, the better).
  • 5.   Season with pepper. Taste and add a little salt if necessary.
  • 6.   Transfer the mashed potato to an ovenproof dish and bake for 15 to 20 minutes. Grill before serving.

  • 500 g of firm-fleshed potato
  • 50 g of butter
  • 50 cl of semi-skimmed milk
  • 1 sprig of parsley
  • 1 tablespoon of olive oil
  • 1 garlic clove
  • 1 pinch of salt
  • 1 pinch of pepper
