Satay Sauce (Thailand)

Instructions

  • 1.   Heat the oil in the wok and sauté the peanuts, stirring, until they start to brown. Remove them, drain them on paper towels. Put them in a food processor with the chili peppers, garlic, onion, salt, lemon juice, and blend until a thick paste is obtained.
  • 2.   Remove the used oil, add 3 more tablespoons to the wok. Add the peanut paste and cook for one minute, stirring well. Add water, brown sugar, and shrimp paste, then stir well. Simmer gently, stirring constantly, until the mixture thickens.
  • 3.   Unused satay sauce can be stored, covered, in the refrigerator.

  • 1 pinch of salt
  • 1 lemon
  • 250 ml of water
  • 3 tablespoon of brown sugar
  • 1 teaspoon of cooked peeled shrimp
