Instructions

  • 1.   Squeeze the lime. Put the robot's bowl in the freezer for 5 minutes. In the chilled robot bowl fitted with the beater, pour the heavy cream. Operate at speed 7 for 2 minutes 30 seconds. Pour the whipped cream into a bowl.
  • 2.   Replace the beater with the ultrablade chopper. Put the smoked salmon, mascarpone, and lime juice in the robot. Blend at speed 12 for 30 seconds. Using a spatula, fold the mousse towards the center and blend again at speed 12 for 30 seconds.
  • 3.   Remove the attachment and gently add the whipped cream. Mix with a spatula. Divide the mixture into glasses and keep them in the refrigerator. Serve chilled, sprinkled with chopped chives.

Notes & Suggestions

  • You can replace the salmon with smoked trout or haddock.
