Instructions

  • 1.   Preheat the oven to 180 °C (350 °F). Squeeze the lemon.
  • 2.   In the food processor fitted with the ultrablade chopping blade, put the ricotta cheese, eggs, sugar, and lemon juice. Blend on speed 12 for 1 minute.
  • 3.   Pour the mixture into a round cake pan (26 to 28 cm in diameter) and cover with parchment paper. Bake for about 40 minutes.
  • 4.   Let it cool before unmolding, then refrigerate.

Notes & Suggestions

  • This Corsican cake is traditionally made with brocciu cheese. You can replace it with brousse cheese or, as in this recipe, with ricotta cheese.
