Carrot Soufflés

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Peel and wash the carrots before cutting them into slices. Steam them for 15 minutes.
  • 3.   Blend them with the egg yolks (keep the egg whites in a bowl) and the cottage cheese. Season with salt and pepper. Add cumin (optional).
  • 4.   Beat the egg whites with a pinch of salt until stiff peaks form. Gently fold them into the previous mixture. Pour into a non-stick soufflé dish.
  • 5.   Bake in the oven for about 25 minutes.
