Morel Mushroom Risotto

Instructions

  • 1.   Peel and finely chop the red onion.
  • 2.   In a sauté pan, melt the onion in olive oil, then add the risotto rice. Toast it for 1 minute while stirring constantly.
  • 3.   Pour in the white wine and let it evaporate, then add the chicken broth gradually.
    Cook while stirring for 20 minutes.
  • 4.   In a sauté pan, sauté the morel mushrooms in butter and let them simmer for 4 to 5 minutes.
    Then add them to the risotto and sprinkle with Parmesan cheese.

    Season and serve hot.

Notes & Suggestions

  • Use canned morel mushrooms.
