Broccoli Soufflé

Very easy and inexpensive Marmiton

Instructions

  • 1.   Preheat the oven to 185°C (375°F).
  • 2.   Cook the broccoli (steamed or in boiling water).
  • 3.   Meanwhile, beat the egg whites until stiff peaks form.
  • 4.   After the broccoli is cooked (wait until it cools down), blend it with the 2 egg yolks, cottage cheese, salt, and pepper.
  • 5.   Gently fold the broccoli mixture into the beaten egg whites.
  • 6.   Fill about 3/4 of small molds with this mixture (if possible, use silicone molds such as cannelé or muffin molds) to make 16 pieces.
  • 7.   Place half a slice of goat cheese on top of each piece.
  • 8.   Bake for 25 minutes.
  • 9.   Serve warm.

  • 1 pinch of freshly ground pepper
  • 1 pinch of salt
