Eggplant Rolls with Ground Meat
These eggplant rolls with ground meat are a delicious dish of Turkish origin.

. Wash the eggplants and cut them into long strips, about 3mm thick.

. Sprinkle with salt and let them drain their water in a colander.

. Prepare the ground meat by mixing all the ingredients together and combining well.

. Take the eggplants and pat each piece on absorbent paper to remove excess water.

. Fry in hot oil on both sides and drain on absorbent paper.

. Take the ground meat and form sausages about 3 cm thick and the same width as the eggplant strips.

. Roll each sausage in the eggplant to fully cover the meat.

. Secure with a toothpick to prevent them from unraveling and garnish with a salted tomato slice and a piece of bell pepper.

. Place the eggplant rolls in a gratin dish as you go.

. Separate the rows of eggplants with half a potato slice.

. Dissolve the tomato paste in boiling water and pour over the eggplant rolls to fully cover them (for even cooking of the ground meat).

. Cover the gratin dish with aluminum foil and bake in a preheated oven at 180 °C for 20 to 30 minutes.
