Endive, Chestnut, Apple, and Goat Cheese Tatin

Instructions

  • 1.   Preheat your oven to 350°F (180°C).

    Remove the outer leaves of the endives and cut them in half lengthwise. Cut off the tough base of each half endive.
  • 2.   Heat the butter and honey, add the endives. Simmer over low heat until the endives no longer release water and are caramelized. (about 30 minutes)
  • 3.   In a buttered tart dish, arrange the endives in a circle, crumble the chestnuts on top; slice the apples and arrange them in a rosette pattern; and finally crumble some cheese all over.
    Lightly salt and pepper.
    Cover with the puff pastry, tucking the edges inside.
  • 4.   Bake for 30 minutes until the pastry is golden.

    Flip the tatin over and serve immediately.

  • 1 goat cheese log
  • 25 g of salted butter
  • 2 tablespoon of honey
  • 1 green apple
  • 1 pinch of salt and pepper
