Vegetarian Moussaka

Very tender and flavorful moussaka with rice and mushrooms, to be served hot or cold.

Instructions

  • 1.   Cut the eggplants into thick slices. Brush them with olive oil on each side. Season with salt and pepper. Grill them on a grill.
  • 2.   Dice the mushrooms. Chop the garlic and onion and sauté them in a little oil with paprika. Add the mushrooms and cook for about 10 minutes.
  • 3.   Meanwhile, cook the rice (covered) in one and a half times its volume of water with a bouillon cube. Beat the eggs and mix them with the cooked rice and mushrooms. Add the chopped parsley and thyme. Check the seasoning.
  • 4.   Grease a baking dish and line the bottom and sides with the eggplant slices. Arrange alternating layers of filling and grilled eggplant slices. Finish with a layer of eggplant.
  • 5.   If possible, bake in a preheated oven at 200°C (400°F) in a water bath for about 50 minutes. Check for doneness. After removing from the oven, wait a few minutes before unmolding.

  • 2 onions
  • 4 eggs
  • 200 g of basmati rice
  • 200 g of button mushroom
  • 2 garlic cloves
  • 3 tablespoon of olive oil
  • 1 vegetable bouillon cube
  • 1 tablespoon of sweet paprika
  • 1 handful of parsley
  • 1 pinch of thyme
  • 1 pinch of salt and pepper
